The Niagara Escarpment is home to ancient forests that share the same dolostone bedrock as our sugar maples. We wild-harvest fresh spruce tips at the peak of the season and slowly infuse them into our maple syrup.
The result is unlike anything you've tasted. The sweetness of the maple is cut by a sharp, resinous, forest-floor note — bright and alive, with a finish that lingers like a walk through old-growth woods.
