The Tapping Season: A Successful Year of Sap and Syrup

As we wrap up another tapping season, we’re filled with gratitude and pride for all that we’ve accomplished. While the season presented a few challenges, the outcome was still a success. With plenty of hard work, dedication, and a bit of resilience, we were able to bring in a bountiful amount of sap and produce a beautiful batch of maple syrup.

A Strong Sap Collection & Boiling Days

This year, we collected an impressive 210,000 gallons of sap—an accomplishment in itself! With 20 full days of boiling, our team worked diligently to transform that sap into the sweet maple syrup we all cherish. Despite the weather and conditions not being as perfect as we'd hoped, we made the most of every day spent boiling and processing.

Sugar Content & Yield

While the sugar content this year was on the lower end, between 1.2% and 1.4%, it still provided us with a significant amount of sap to work with. The sugar-to-sap ratio ended up being 60:1, which meant it took a little more sap than usual to create syrup. Although we didn't reach the 100 drums we initially anticipated, we produced 85 drums of syrup—still an excellent result!

12,000 Taps, 12,750 Litres of Syrup

We tapped 12,000 trees this season, and even with the lower sugar content, we still made 12,750 liters of maple syrup. That’s an average of 1.1 liters of syrup per tap, which is a solid yield and a testament to the effort put into every step of the process. We’re incredibly proud of the syrup we produced and the quality we were able to achieve despite the challenges.

Looking Ahead to Next Year

As always, the tapping season reminds us of the unpredictability of nature. Every year brings its own set of surprises, but it’s all part of the process. We’re thankful for the abundance of sap, the hard work of our team, and the delicious maple syrup we’ve made. We’re already looking forward to next season, with optimism for even better conditions and higher sugar content.
